吃素可預防糖尿病?一項本土研究發現,茹素飲食可大幅降低糖尿病風險。

迷思2./吃素是否會營養不良?

營養師邱雪婷指出,其實無論吃素或吃葷,若吃的不均衡,即便熱量足夠,還是有可能營養不良,特別是許多會影響疾病的微量元素。許多人普遍肉類過量,但蔬果,全穀類,以及堅果種子吃的不夠,反而有可能缺乏纖維質、維他命C、葉酸和鎂。素食者若只是吃白飯配青菜,而沒吃豆類和堅果種子,也有可能蛋白質不足。
